I think everyone who goes to Florence has a list of things they absolutely must do, you know? Seeing David is, of course, right up there. So is walking across the Ponte Vecchio at sunset, probably. And naturally, you have to eat your body weight in gelato. But for me, anyway, there was something else I really wanted to find. That’s actually why I started looking for a pasta-making class, but not just any class. I wanted one that wasn’t in some sort of shiny, commercial kitchen. Basically, I hoped to find a class in someone’s home, taught by someone who learned these skills from their own grandmother, you know? It’s almost a fairy tale idea, yet after some searching, I pretty much found exactly that: a small, intimate Tuscan pasta making session with a genuine local expert, right in her own apartment. And frankly, it turned out to be the highlight of my whole trip.
