That place is totally brimming with culinary delights, a number of which you won’t actually find anywhere else. Are you thinking of heading that way? All of that sits snugly on these heated stones. Usually, huge rhubarb leaves are used to cover all of that to keep it very moist and so very smoky while it all steams.

Oh, wow, is the result ever something! It’s very smoky, it’s hearty, it tastes so unbelievably of the sea, it’s really almost an edible history lesson! That taste really is something. Almost every bite is layered in deep, rich history. People typically make this outside. And, too, it’s almost always a communal feast; sharing the delicious food is totally part of the entire experience. When I visited a few years ago, alright, my host, an elderly lady named Elena, said that “Curanto isn’t just food; it’s the soul of Chiloé.” Seriously, I can absolutely still taste that meal. Each smoky, rich chunk that tells you the tales about the past of this stunning isle. This isn’t a dinner you’re eating. Instead, it’s a gathering with each chunk narrating folklore and memories that bond people and the land together.

So, how might you best try this out, too, for yourself? Many spots on the island offer curanto, alright, so from family-owned eateries right on the coast up to some specialized curanto restaurants! Now, there’s one tip. If you are going to head on down, check out local listings. Milcao and Chapalele: Potato Perfection

When we’re talking carb delights, Chiloé very much does its best, and it puts potatoes as, like, the star! I guess you could say they have a potato state of mind? Oh, my, with about 300 different varieties just chilling here, and two of the top must-try spud dishes are milcao and chapalele.

Milcao: What this one actually is, it is this kinda flat cake basically that gets created from the raw and mashed potatoes, you see, all mixed! Then, too, it’s almost cooked. You might find these baked, or also fried; anyway you have ‘em, the taste, alright, is totally comforting and oh so hearty. As I was touring, right, on the island, it happened that I bumped into that delightful food vendor while in Dalcahue, whose fam’ly recipe was a little distinct. She used that smoked pork fat just a bit and added a sprinkle just very little of merkén spice. Boy oh boy. Was that very good.

Chapalele: That’s different alright from milcao, you see; these get boiled first or steamed. Think of the texture a bit like something with the density from a dumpling but so much milder tasting. It’s often paired with any number of stews or like on its own with some butter, right, that’s great! So you can really taste that taste of fresh potatoes. One evening I took these, alright, at a cute small café in Castro, so they brought those to me along a plate piled super high in seafood stew. Goodness! It made for just really the perfect warmer-upper on a breezy coastal day.

If you want to taste, just too, both? Just pop in almost any local cafe or at that famers’ market. As a matter of fact, lots of families still really make them from home, right, meaning so it might be offered in those super quaint, more home-style restaurants. While so very straightforward as they might just seem? The very essence there to Chilote ancestry seriously remains in them! What I kinda noticed when I bit, so, into this super perfect milcao was like taking that step right into family traditions that I found were so very much kept from the older gen’s memories! Those basic staples? You may not believe, actually, how profoundly meaningful those actually become.

Cazuela: Hearty Soups

Now if, too, you are looking for something right that will warm you up? So Chiloé’s take that fam’ly of soup known just as cazuela could just be right what you really needed! You see that’s not just kinda like normal broth really now but really an expertise of just those hearty, slow-cooked delicious flavors.

Now that can mean many very different soups you can just get, you find! So they can include beef, they can include chicken or maybe also lamb. I find that it’s super common there right that potatoes of any type find a spot too! Huge wedges of squash go in it and too bits of maize. Now that just slowly cooks to this really yummy, nourishing broth. Ah! On chilly mornings right in Chiloé just nothing compares well to the steaming, warm plate of cazuela for actually banishing that cold feel you sometimes get in your fingers!

One day right back during that summer, alright, on the island of Quinchao? One can basically remember really distinctly this very family, ok, restaurant I kinda stumbled onto, oh gosh it was tiny. The woman, ok, who also just ran that little house style shop really gave me lamb cazuela there along homemade bread with it, oh geez! Just that light smoke fragrance coming at ya right off the chimney combined only just slightly the lamb broth richness! It made also just kind of the coziest meals someone, such as me there can also ever expect just right when ya just kinda walk thru South America, right!

If one would want actually also taste that while just cruising about in Chiloe then, uh? Any market stalls just anywhere, family establishments are just where ya might probably find what ya are really also seeking! While usually pretty distinct per home ya should still just find almost always one solid thing, right which can be? A filling plate done also lovingly which tells almost too its tales of generations past there! I guess if you, just like your grandma always says ‘soups kind of hold everything in ya!’ she doesn’t steer just wayyyy too wrong with that fact actually!

Licor de Oro: The Golden Liqueur

Let’s switch it over and highlight one super standout adult beverage of that location so then too, that becomes Licor de Oro! A translation says ‘liqueur made of gold’ actually it is, just quite smooth as is almost ever too just what one is wanting or just looking so so badly for too then. Right?

Now it kinda gains all of such signature flavoring with whey being used that is being a result during some cheese making period too just in order being used like then! With this infusion just coming, ya end right being granted that slight vanilla after hint really there actually, alright with something being golden tinted to show. Then people commonly like sipping that right straight just from shots following some dish that is huge, for real! Or maybe people will also wanna get crafty being bartenders making cocktails in many awesome distinct flavors so so too yeah! Back when I could go, oh this little boutique there, alright Castro shops were having all of them little liquor things on stock for sales also but right inside so really awesome ornate flask for purchasing yeah uh huh!

Licor De Oro could just have that super local attraction while travelling and it is worth experiencing at least a one shot if so okay. Oh alright, now be advised of being too cautious for purchasing! This could easily climb as being kind of sugary oh god so also then right after just such quick you’d think yeah that’s mild right? The one’s thing could turn into five shots oh geez in such shorter period and boy gee do I can relate so seriously that fact really.

Sopaipillas Chilenas: Fried Goodness

Oh wow what are just probably that South American delight right in cuisine which right also brings almost everyone kinda almost too kinda from those very deep thoughts, now eh oh huh!? Just something one probably won’t forget right in their heart I’d mean also that’d stand really actually true! But what probably brings Chiloe there with one twist onto one dish. Right is these thing of ‘sopaipillas Chilenas’ there alright?

So then too yeah what ya just had always figured too them all fried then probably oh so probably well okay-eh… Well this would always kinda become deep, actually that pumpkin enhanced fried circle pastry’s as they almost call themselves, almost all done too right? Right always by gold when they being super also heated oh well damn so also really I wish and probably could want uh? Then again right when prepared just the common street food version can bring what might ya would seek oh what am I getting! All of this kind of syrup along with lots just that dusting onto all too powdered something sweet too or not just all either even right kinda that mild for just all really so eh oh? But also those versions one is kinda gonna catch there in Chiloé right you aren’t either with some kinda always common just what is normal that yeah I just said that above. Instead all there mostly being offered alongside a whole slather just a pebre with almost all just always well so fresh for sure. Kinda actually for one that kind uh really uh!

Like those versions as offered one must seriously always go and find eh yeah just go oh right for so seriously so good! With what one may or actually what might catch ya almost off guard right is just how actually yum that pebre being the ingredient on each dish will make what always could too seem a light snack become always always then just totally right for dinner! You aren’t going with feeling you get full after those too then yeah! Actually the whole memory of I was one, actually when one got the chance for roaming some from small markets and for tasting the ‘on food’ items oh for good heck damn seriously alright and how they actually got just served damn!! Gee golly one was eating almost lots then many each vendor offered what could only seriously right they did!
