1. Mercantile Dining & Provision: Union Station’s Gem
Mercantile is, arguably, very more than just a restaurant. That, you see, it’s a food experience right in the core of the totally redone Union Station! Really, with Chef Alex Seidel steering things, expect dishes created with some locally farmed ingredients that make your mouth sing. The place itself has a relaxed feel to it. Almost, it’s an airy market during daytime morphs very slowly into a really comfy eating spot in the evening. If I went I would say, try one of the handcrafted cocktails – or any, and order plates created to be shared. Do it and find why it remains on lots of people’s fave place.
Personally, it’s the kind of place I think would be wonderful for like, watching people. The spot is that really comfy while being sorta fancy. Seeing the mixing of travellers and some Denver locals makes me wanna relax, while I chew on a delicious appetizer. I really feel Mercantile kinda, in some respects, gets the heartbeat that is Denver.
