I do suggest trying the pozole, a traditional stew, it’s slow-cooked, full of hominy, tender meat, and is seasoned with chilies and spices. Very well, this place definitely takes those classic flavors you find all over Villahermosa and then presents them in this modern way. It’s like they are saying, “We love our traditions, and still, we also think we can do new and interesting things with them.” I find the setting kind of stylish but still comfortable. Meaning that, it makes Madan feel right for almost anything – from a fancy night out to, actually, just a laid-back dinner.
You might consider their seafood dishes particularly shine at Madan, they use extremely fresh, locally sourced ingredients, prepared in a manner that enhances all the natural flavors. Arguably, their menu often includes catches of the day prepared with regional herbs and spices, as I found it always provides an authentic culinary trip. The restaurant definitely delivers on the flavor and originality fronts and it’s this ability that really places Madan a step above those standard dining experiences.

5. Marisqueria La Jaiba: Fresh Seafood Fiesta
If you love your seafood, then, it’s almost as though Marisqueria La Jaiba is speaking directly to you. Actually, this place doesn’t mess around. Now, the minute you walk in, that smell of sea air kind of tells you everything is very, very fresh. Marisqueria, you know, that translates to “seafood place” in Spanish, actually that means that you know precisely what you’re getting. This is actually somewhere where the seafood is about being good. I find this place excellent, very relaxed, and completely all about the great tastes. Oh and don’t you worry about what you have on.
Shrimp aguachile, swimming in a vibrant lime and chili marinade is such a tasty example of all their talent and ability. The grilled octopus here turns the dish into something very sophisticated in the kitchen, just how the chefs are with it, in a way. It’s perfectly tender. I like all of the fresh seafood prepared just right in this kitchen, it tastes great.
