Restaurante El Nuevo Oh Que Rico! I really can not resist the flavors of this place. Actually, it is almost like finding yourself at someone’s abuela’s, well granny’s, cooking, a little slice of Chiapas heaven on a plate is a possibility. The restaurant may be called small and it, frankly, may be without any posh trimmings, actually it too offers you plates full of like your simple, like super authentic, very comforting Chiapanecan soul food. This can fill the heart of even, basically, those most hard-hearted of critics.
What to try: Sample butifarras which, very, are like these small spiced sausages, actually from San Juan Chamula, which, frankly, is pretty close by, in some respects. Also I hear that you may like their chicken in pepian sauce which, arguably, often seems to be on the specials board. Also keep an eye for it and maybe snag some!

Chiapas is definitely famed for the yummy coffees it too produces. You can not leave the state without actually sampling a cup from there.
